View Full Version : Imitating Nestle Buncha Crunch- will this work?

I plan to make this chocolate recipe:
2 C Cacao Butter (melted)
1/8 - 1/4 C Cacao Powder
1/2 - 3/4 C Agave
2 tsp- 2 Tbsp Vanilla
Blend ingredients till super smooth. Pour into molds or spread onto a cookie sheet and freeze.
Then pour it over a bunch of buckwheat I had dehydrated, then drop in onto parchment paper on a cookie sheet with 1/2 tsp scoop to get little clusters, and freeze it to harden the chocolate.
Do you think this will work?

2 cups is alot of cacao butter...I'd addd more cacao....maybe a cup. I'd add a pinch of salt and a touch of vanilla too.

If your using 2 cups of cacao butter you are going to need WAY more cacao powder. I'm sure exactly how much but I think it will be close to 2 cups of cacow powder. Other then that I think it will be great!

I think there is a recipe like that somewhere here on the board...I think they even used buckwheaties!! Try the search.
What in the world are buckwheaties??

Aren't they soaked then dehydrated buckwheat groats or something? I think they are ani phyos creation lol :) xxx

They are sprouted buckwheat dehydrated....sometimes called buckwheaties! Little crunchy goodness!!

Buckwheaties have been around a long time and many raw chefs have something similar in their books...makes a great crunchy addition to cereal, candies, etc...

Yes, buckwheaties are wonderful--I make a quick cereal with them, cacao nibs, gogi berries and hemp nut seeds with almond milk=yum!!
I finally bought cacao butter and it is going really fast--I'm my own Easter bunny. How do you melt it without heating it too much? It is so hard.

Either in the dehydrator or in a double boiler fashioned set up over very warm water.

why do I need more cacao powder, of the cacao butter already smells chocolatey enough?

I haven't seen a recipe with those type of porportions before....it really does seem like alot of cacao butter. Let us know how it goes.

You could use less cacao butter instead if you'd prefer.
#1.cacao butter is very expensive...why use more than you need.
#2. the cacao powder is going to give you a LOT more chocolate taste than the butter will. The butter just makes it richer, creamier, a more "chocolaty" mouth feel and helps the finished chocolate hold its shape at room temp.

ooooh ok, I get it, how much cacao butter do you think I should use, I found this recipe on goneraw.com, and another one I found suggested 1.5 C of cacao butter and like 4 Tbsp of cacao powder....
What would be the best measurements?
