So I have the chocolate covered cherry recipe. I will try that. But what I really would like to have is a recipe for a cherry crisp type of recipe. Any suggestions?

Not cherry crisp yet Alissa has a stupendous Chocolate Forest Cake in her book. Just make sure you have a cherry pitter. It's fantabulous!

Do you have a dehydrator? I would like to know how long they take to dehydrate.

I like to freeze a ton of my harvest and eat them all year; It's great to have fresh (almost! Very close) cherries in the dead of winter.
I put them in my green smoothies.
One great way I like to use them, especially now for Summer, is to make cherry creamsicles :)
Use your nut of preference (a creamy one is best) and blend (blender is best to get it smooth) with a piece of vanilla bean (or extract); the cherries; sweetener, if needed (but probably not); a small squeeze of lemon, if desired, or rind; and any other additions -- coconut is a fantastic one :).
Then pour into popsicle molds (very inexpensive and available at most stores) and freeze several hours -- even ice cube trays; you can use toothpicks for the stick :), or just eat 'em as poppers.
You could do combintation blends as well.
And of course, any of the summer fruits work wonderfully -- peaches 'n cream :), nectarines, plums, apricots, oranges, strawberries, melons, blueberries, on and on...SO yum!
