I had stored white miso in a vacuum sealed glass jar in the cupboard and just got to take some and it was moldy.

How are you supposed to keep miso?

I believe miso must be kept refrigerated.

Yeah, I'm pretty sure you need to refrigerate it once it's opened.

I have a container of white miso which I purchased a few months ago. I looked at the expiration date today and it's over a year away! But yes, it has to be kept in the fridge.

How come none of the miso packages I ever bought say to refrigerate? Are we supposed to guess? Normally the package says when refrigeration is needed.

I had never refrigerated it before and it had never gone bad, but I did always keep it in a vacuum sealed jar. What is it that causes something, like miso in this case, to keep at room temperature for years, but that when you open it it suddenly needs refrigeration? Is it the air? If so I guess that's why my unrefrigerated miso kept before, and maybe there was an air leak this last time that let air back in.

From now on I'll refrigerate it and vacuum seal it.
