1. Are rolled oats processed from steel cut oats or are they raw in themselves? Which do I use in recipes?

2. What are "oat groats." I've been seeing those in recipes too.

Yea, I'd like to get a primer on this as well. I just ordered some raw oats from Alissa Cohen's website here -

- just to see how they look or taste differently from those you get at places like Whole Foods. I'm not really sure what processing has been done to oats at the typical supermarket, even if they say "raw".
