I picked up some dates last night. I'm not sure why because I have never used them before but for some reason they "spoke" to me and I had to get them. But now I don't know what to do with them.

I'm browing for recipes but was wondering if any of you would be willing share some idea of what you do with them.

Dates are natures candy. My favorite are medjools. I love RP's brownies cuz they are simple and delish.

Rp Brownies


1 cup walnuts (unsoaked)
1 cup dates (pitted unsoaked)
1/4 cup cocoa powder (you may use carob if you like)

Place in food processor, and blend until well blended; should still be dry and chunky, appx 30 seconds. Press into a small springform pan. Refrigerate until you can insert a knife and it isn't too sticky.

Cut into little pieces, then place in plastic baggies and freeze.

They can be eaten fresh from the fridge or from the freezer.

Wow, those sound simply delish!!! I need to get myself some cocoa powder, all I have is Hersheys and I know that's not raw. LOL

To make pie crust, food process (or blend in a vitamix) equal amounts unsoaked nuts and unsoaked dates until chunky but stuck together. Fill with favorite fruits and enjoy!

To make carrot cake, blend 1/2 cup soaked dates with 1/4 cup water. Mix with 2 tbs. melted coconut oil, 2 cups ground flax seeds and a dash of cinnamon. Store in the fridge until firm. It's nice with a dried coconut/agave nectar frosting.

here's a quick easy snack with one medjool date and 4 nuts (or sometimes doubled):
I take the date and tear it half lengthwise to get out the pit. Then I stuff 2 raw walnut halves into each half of the date. Then I eat it.
This is so yummy and takes the edge off when I get home from work and won't be eating right away. Or as a mid morning snack.

Brownies? Ohh I have to make some of that! LOL I make Alissas fudge balls with the dates- so easy and way nummy. Even my kids love it and it is a sweet I can give them without feeling like I am poisoning them.

Great ideas. Mmmmm carrot cake, will have to try that one soon.

Anita - I haven't tried one plain before but that sounds like a good snack.

I just made them finally yesterday..........they are so yummy!! They seem more like a fudge then a brownie to me but hey, it's chocolate!

I seriously love dates, so much that I think I'm going to start cutting back. They are just SOOO sweet, and I can eat them plain, or with some additional fruit like apple or coconut. I'm going to try and just use them as a sweetener only because really, I love those little things! (especially juicy medjool)
