if it says "fresca" it might be raw--most salsas use cooked tomatoes
Salsa cruda(pico de gallo, salsa fresca etc.) are the only raw salsas
from wiki:
Salsa cruda ("raw sauce"), also known as pico de gallo ("rooster's beak"), salsa picada ("chopped sauce"), salsa mexicana ("Mexican sauce"), or salsa fresca ("fresh sauce"): made with raw tomatoes, lime juice, chilli peppers, onions, cilantro leaves, and other coarsely chopped raw ingredients.

Well I'm looking at their website now trying to ascertain, it does have an expiry date and is refridgerated though....

Anything put in a container to sit on a shelf MUST have reduced or practically non-existent enzymatic activity....either through heat pasturization, chemical stabilization or both. They call that 'shelf-stable'. Ha! ha! I would stick to making fresh. Just my experience.
