I made flax veggie crackers ages ago... I just don't use them very often. How long will they last in the fridge??

I usually don't keep them for longer than a couple weeks outside of the fridge (at MOST -- they're usually gone before that anyways!), but I would think in the fridge would at least double the time.

Do they seem okay??

I made a big batch of flax crackers in late January. I froze 1/3, put 1/3 in the refrigerator and 1/3 in the cabinet. I used glass pyrex containers except for the frozen ones, I put them in "freezer" storage bags.

The cabinet crackers lasted about 2 weeks - still crisp and fresh.

The ones in the fridge lasted well over 3 weeks to a month.

The crackers in the freezer I just had recently...they lasted 3 months. They were not as fresh right out of the dehydrator, but I didn't experience any ill effects eating them.

It depends on how dry they are.
I have kept really dry ones for months (out of the fridge) and they were perfect.
Sometimes I do not dry them very much (if I want to bend them and use them to make a sandwich) and these I put in the fridge and eat within a week.
