Coconut cream sauce

Hi there~:)
I don't have a recipe because I tend to wing things but I use a whole thai coconut, flesh and water, a couple of handfuls of cashews, some agave or dates & vanilla, cinnamon and a pink of salt...if you want it alittle thicker (it will thicken up in the fridge anyway) add a tsp. lecithin or a T. coconut oil. Blend like crazy in the VM till satiny smooth...it's very creamy and sweet.

I made the banana leather roll up with nut cream inside that Alissa makes on the DVD. They were delicious.

Sounds like the coconut cream sause would be good on those. My guys liked them with the strawberry sause, but would have liked it a bit more sweet.
