Raw tacos: walnut taco meat, fresh salsa w cilantro, guacamole, lettuce in collard green shells, oh my my my! It was so good! DH had his regular tacos and I didn't even have to feel left out!! :D

There's the simple way-take chopped walnuts add spices like chili powder, cayenne powder, Nama Shoyu and/or salt.

or

1 cup Walnuts (optional soaked)
6-10 soaked Sundried Tomatoes
1-2 Tbs Olive Oil
Chili powder
Cayenne powder
½-1 tsp Salt
Optional: Dried mixed spices, chopped onion, tomatoes, cilantro
Blend.

Sounds easy enough, I'll definately have to give that a try. Mmmmmmmm I definately need to add more easy and yummy recipes to my rsenal.

...since I haven't been able to find any nice collards recently.:) I always use romaine. They make great wraps.

GilmoreGirl, your recipe sounds great! (the tomatoes!) Think i'll try that next time! Mine was:

1 1/2 cups walnuts
1 1/2 tsp cumin
3/4 tsp coriander
2 tsp Nama Shoyu
Cayenne pepper to taste

Process the walnuts 'till taco meat consistency. Stir in the dry ingredients, then the Nama Shoyu. Taco meat!
