...has anyone ever done this? I'm thinking about cutting up a mature coconut and putting it in the FP......? Wow, that would be nice and fresh and much cheaper coconut butter....if it works....????

When I make my coconut energy bars that's pretty much what I did, except with dates, cacao and mint oil added. I did let it get quite smooth but not perfectly, I may try running mature coconut in my green star, it works great for almond butter.

What do you use coconut butter for? I bought some once and never figured what to do with it. I use coconut oil by the ton though.

...I use coco butter in desserts mainly....I think it is pretty much interchangeable with the oil, but I just love the flavor and texture.....lately I've been making a quick candy with a bit of cashew butter, dash of agave, dash of cinnamon and couple of spoonfuls of coco oil or butter...mix until smooth and make little dallops on wax paper.....in about 15 minutes it makes a nice smooth candy like thing....my kids like mixing them up too!

I've used some in smoothies too, but not that much......

Your recipe sounds intresting, but you say after 15 minutes it makes a candy like thing, but after 15 minutes of what? Do you just let it sit there, or refrigerate or dehydrate?

Is the texture different between coconut oil and coconut butter? Matt Amsden's book said they were interchangeable so I have the oil. I buy a big container so it doesn't seem too pricey.

i've always thought the butter and oil are the same thing-the butter is the oil solidified-no?

Coconut oil and coconut butter used to mean the same thing, until companies like Artisana starting producing a coconut spread - which includes coconut meat - and called it "coconut butter." This has caused some confusion, so it's important to figure out what a recipe requires when it says coconut butter, otherwise you may get the wrong consistency and end result.

I do this quite often. I put the meat and water from a mature coconut in the vitamix and then put it in the freezer in ice cube trays until it is frozen then transfer it to a freezer safe container. I use them mainly in smoothies. I love mature coconuts.

Raweater: I'm sorry! I put them in the freezer! Then they harden up...they will stay that way out, in this cooler weather...but in warmer weather...will melt at room temp.

Coco butter has the coco meat in it...coco oil, is just the oil............
