Bitter Broccoli, anyone?:mad:

I made some broccili soup, and its bitter and stong. is it because I used the florets instead of the stalks to make it?

I have that problem with broccoli too. So frequently that I've stopped buying it... :( Don't know what the deal is, hope some one has an idea and better yet how not to choose the bitter stuff!

The longer it takes to get from the plant to your table, the more bitter it will taste. Normally broccoli right off the plant is very sweet. If it had a lot of stress growing, the broccoli could be bitter.

I have experimented with the soup to the point I like it now. I use the florets only and very little garlic (1/4 clove) and extra salt and cumin.

Most importantly I eat it right away. The taste isn't strong or bitter at all that way. Hope this helps.:)

How are you guys making this soup? Do you steam it lightly and briefly, or is this a cold soup?

Cold from the Vitamix (which warms it slightly the longer you whiz it up). Wouldn't be raw if I steamed it.:rolleyes:
