View Full Version : Favorite salad combo?

With all of summer's abundance coming in now and in the near future, I thought I'd ask what everyone likes in their salads. Usually, I put everything but the kitchen sink in my salads. Sometimes there are *fifteen* veggies in there!

But now I'm starting to make much simpler salads- like romaine and tomato, or tomato and cucumber, or spinach and orange pieces. This way it seems different every day and I don't get bored. Of course I do wraps and pockets as well.

Another favorite is to fold up collard leaves and other greens, lettuce or cabbage and to slice in thin strips. I then drape them over a shallow "spaghetti" bowl, so some of it is hanging over the side, before adding other veggies. It looks pretty, I think.

Hi Autumn,
Tonight I made a salad with beets (julliened with my mandoline) as well as carrots, celery (just chopped), slivered almonds, lime zest and mint leaves.
I tossed it with a white wine vinagrette and ate it with romaine leaves. I wanted to eat it with the beet greens, but they were wilted. :( Anyway, the whole thing was yummy.

My salads, too, are pretty simple. I don't get into a lot of different varieties...I usually do lettuce (green leaf, red leaf or romaine), onions (red or green), tomatoes, red bell peppers, grated carrots and that's about it.

If I have any, I'll put my homemade pickled banana peppers on it or sometimes chopped nuts or sunflower seeds.

Lately, I've been experimenting with adding fruit to my salads like chopped apples or raisins.

I also like doing carrot-raisin salads but I add celery and a creamy slaw-like dressing.

oh , my FAVORITE salads are ALWAYS leafy green ones , no iceberg for me -nope ,mine consists of kale (usually dino) , arugula , red lettuce , romaine , some cilantro and dill , maybe purple cabbage (I like the color ,like something a fairy would eat) ,red bell pepper ,strawberries, and maybe ,just maybe dried figs! mmmmmmm................ topped with my very own vinegarette!

oh , I also forgot my other favorite salad component (sp?) SEAWEEDS !!!!! usually wakame and arame topped with dulse and nori , with sesame seeds sprinkled on top!

I do the same as you to keep the variety going. Here are some combos I like - I always use romaine, and sometimes spinach

red onions, cucumbers, avo

olives, shredded carrots, green onion

red pepper, cucumber, avo

jicama, sun-dried tomatoes, olives

cilantro, red onion, olives

I like to use either red or green onion. You can see that if you keep about 5-6 ingredients on hand, there are almost endless combinations.

I usually don't use any lettuce in mine at all, especially not iceberg or romaine which AFAIK are basically crunchy water. I use whatever set of the following I happen to have:

mustard greens
boy choy
cucumbers
tomatoes
green onions
red bell pepper
corriander
carrots
kale
spinach
kale
swiss chard
sprouts

The kale and swiss chard aren't favorites of mine, but if I have a strong dressing that helps cut the taste, especially if I slice it up fairly thin.

I usually don't make those kitchen-sink salads; they just take too darn long, and I'm often dying to eat. Right. Then.

So ... a staple is spring lettuc mix, herbs, avocado, cucumber, tomato. I've been on a cilantro kick lately, so I usually tear some into any and everything.

I make Rhio's Marinated Collard Ribbons with collard or kale and toss it with some pinenuts and diced red bell pepper. It look pretty and is another terrific way to get more kale in me in addition to the green smoothies.

Sometimes I get into roots and spiral-slice beets and daikon on top of greens, then sprinkle soaked, dehydrated sunflower seeds over the top for some crunch.

I have been going for much more simple lately. And, mixing more than maybe two items together just doesn't seem natural. So ... that's my story, Autumn.

I didn't get my seeds in in time, so I'm so unhappy right now with my non-harvest. Still time out here to plant some things, though, so maybe I'll have your abundance eventually!

Oh ... I don't combine fruits with veggies in my salads -- or at all, actually.

My salads are usually very simple, and I love this combo:

Arugula
Avocado
Sliced red onion
Walnuts
Squeeze of lime or lemon (preferably lime!)
Light sprinkling of sea salt

Now I'm getting hungry!!!

Ahhhhhhh arugula. Yum. Haven't seem much of that since I moved South. Nor escarole. *cries*

My two favorite salads:

Guacamole salad-
Spinach, Arugala, tomato, red onion, carrots, red bell pepper, avocado, fresh cilantro, ground black pepper, nama shoyu, chili powder

(no name, but rediculously goooood)-
Lacinato Kale, arugala, spinach, tomato, carrot, red onion, ripe d'anjou pear, basil tossed with balsamic vinegar and drizzled tahini on top. <--so good i could eat it for dessert!

I've changed many people's minds about raw foods with these 2! It's great when your friends are begging you for a bite of your salad, while they are stuck with pizza on their plates!
