Are there any chocolat puddings that do not use young coconut? Some local stores have some but the ones I got so far barely have any meat at all, maybe 2 tbsp of meat per nut!
Now that I think of it, I remember an avocado based pudding, but something tells me this would not keep for long in the fridge, am I right about that? Or would it keep at least 2-4 days (I store my food in a vacuum container before refrigerating which extends keeping time significantly).
Are there others that do not use either avocado or young coconut? If avocado does keep for a while it may be a good base but I don't remember my last avocado chocolate pudding being that good so I'd like to know if there are other bases that can me used. A vanilla pudding that's coconut and avocado free would also be great.
My all time favorite raw pudding is butterscotch from the book RAWSOME, here it is:
1 cup dried apricots, soaked (recipe says overnight, 1-2 hours seems fine)
2 bananas
8 dates
1/2 - 1 vanilla bean
1/4 cup almond butter
If you have a good blender that can handle thick mixtures ($200+ blenders), put the ingredients in it, otherwise use a food processor but the pudding will not be as smooth, with at least 1/2 cup of apricot soak water and blend, adding just enough water for a pudding consistency.
This taste surprisingly similar to real butterscotch pudding, I made the recipe 3 times in the past 3 days, and doubled it last time.
