View Full Version : Amazing zucchini bread

I just created this last week and have made 2 more batches since. Play with it a bit, I don't really measure ingredients...so it goes something like this:

2 c. almond pulp (from almond milk)
2 c. ground flax meal
2 average size zucchinis (I threw them in my cuisinart until mushy, some pieces)
1 T. cumin
1 T. coriander
1 T. turmeric
1 T. dill...last week I added something else, but dill is great too!
1 teaspoon cayenne
salt and pepper to taste about 1 t...

any of these spices can be changed to suit whatever you are making...italian seasoning would be great to accompany a "pasta."

form into a loaf about 4" by 4" by 8ish" and dehydrate at 115 degrees for an hour or two. I slice about 1/2 inches, if you like a thicker bread, slice thicker (though you may need to dehydrate longer once sliced) then dehydrate the slices for another few hours. I store it in the fridge, then when ready to eat I dehydrate for about 15min to warm it and firm it up a bit.

It came out a little hot, I think I went overboard on the cayenne :eek:

Otherwise, pretty good!
Though I think I need to play around a little to suit my taste buds, they're still a little out of whack and don't really dig many dehydrated items (except for dried fruit and flax crackers).

I'm thinking of making a sandwich with it later...a little tomato, and avocado...yummy!
