I have:

100g raw cacao paste
100g raw cacao butter
agave nectar

various nuts...macs, cashews, pecans, etc, etc


What quantities do I need to use to be able to produce some small tasty choccies for the occasional treat?


BTW, I love Shazzie's raw chocolate bars!

Don't remember where I got this. It is very good. It can be moulded or just poured onto a plate, cooled in the fridge, and cut into pieces.

What is cacao paste? Nibs ground to a nut butter consistacy? That's a new one to me. If so just use that instead of the nibs.

Chocolate Candy

1 cup finely ground cocao nibs (in Vitamix)
1/4 cup agave
1/4 cup melted cacao butter

Mix all in Vitamix. Pour onto plastic wrap and set in refrigerator a few minutes.

This stays firm and tastes very much like dark chocolate candy.

*Tip: the cacao butter melts much easier if shaved from the lump (rather than broken) and placed in a cup which is then set in a bowl of hot tap water.

Doe,

I bought the cacao paste from www.totalrawfood.com and it is described as crushed raw cacao beans and an easy form to use for making your own raw chocolate.

Thanks for your recipe I do have cacao nibs as well (found them at the back of my cupboard). I hope a few other people respond as well as I'd like to have a few ideas to try.

Hi Tracy!

The best raw chocolate recipe I have found came from gone raw. I don't know the weights for the ingredients, but doing it by volume has worked perfectly every time:

1/2 C cacao butter (I chop it before measuring it)
1/2 C cashews
1/2 C cocoa powder
1/2 C carob
All should be raw, of course!
Melt the cacao butter in your dehydrator. Put everything in the vitamix and blend. Pour/Scrape into a bowl to cool slightly. When it is not too hard, roll it into individual balls and dust with more cocoa powder.

To clarify, do you use 1/2 a cup of cacao/chocolate powder PLUS 1/2 a cup of carob powder??? I don't have any raw carob powder......
