View Full Version : Round Recipe Challenge!

My daughter's school has a potluck in which everyone is supposed to bring a round dish to share...it's a pie party...dessert pies, pizza pies, shepards pies, etc.
Anyone have an *affordable* recipe idea? I can't afford to buy enough almonds for the crust, so something else cheaper/less nutty would be great :)
I do have a dehydrator but prefer not to use it if possible. Thanks!!!

The first thing that came to my mind was a crustless fruit pie. Or make a coconut/date crust and fill it with fruit.

Ohhhh.. and you could do a coconut frosting kind of runny and drizzle it over the top! That would take great if you go kind of tropical with it. Maybe bananas, kiwis, etc. You should be able to make it pretty cheaply.

Layer the bottom of your pie pan with slices of fruit...bananas, kiwi as cmchapman75 suggested or strawberries comes to mind, bananas being the least expensive and then top with whatever type of pie filling you choose to make that would go well with the fruit of choice.
Another thing you could do is make a cobbler. Put your fruit filling the the pan and then top with ground almonds that you've mixed with cinnamon and a little agave or processed with dates or raisins and even coconut flakes. Making a crumble topping uses less nuts than an actual crust pressed into the pan.
