Dried Fruit/Dates

Just read on a gluten free diet site that dried fruits may have a dusting of flour/starch to keep them from sticking together....especially dates.

I believe they are required to list such things in the ingredients, no?

Depends on where you get them!!
One of the places that I contacted on line said that their dates were picked from the trees and put in a box to sell. They don't do any processing to them.
