View Full Version : Easter Dinner Ideas to Impress SADs!

I'm having Easter dinner at my in-laws house. Okay, they already thought I was a nut when I was a cooked vegan, but now...I have to impress them.
I'm mostly bringing foods for myself to enjoy while they feast on their SAD ham dinner. But I'd love to share some, too. Anyone have any SIMPLE and impressive recipe ideas? I'm open to anything so long as it doesn't require a dehydrator...I'm leaving it in the basement and refuse to remove it :)

Do you like broccoli? This salad is soooo good - they'll think it's cooked, honestly.

Surprise Broccoli Salad
The suprise of this salad is that people will think the broccoli is cooked (it's not!).

Broccoli
Cucumber
Dried Figs(or other)
Raw Apple Cider Vinegar
Raw Agave Nectar (optional)
Sunflower Seeds (optional)

Was broccoli well and remove flower part from stems. Cut florets into sized desired. Pare stems and slice into thin pieces. Place broccoli in bowl. Sprinkle with sea salt and drizzle with Olive Oil. Massage for a minute or two. Set aside. Pare cucumber, slice in quarters and then pieces. Add to broccoli. Slice some dried figs into thin pieces and add to salad - you could use raisins, gogi berries or other dried fruits or leave out altogether. Add a splash of Raw Apple Cider Vinegar and mix well into salad. Adjust seasonings if needed - a few drops of agave to balance vinegar.

Add Sunflower seeds if you like more crunch. This salad keeps well.

The raw lasagne created by Russell James is a fabulous main course meal. It's so pretty and colourful and the taste is amazing.

The carrot cake on www.therawtable.com is also delicious.

Both dishes would really impress SAD eaters.

For an easy thing that always hits the spot you can make some guacamole. Anytime I make this everyone around me devours it.

Id suggest making onion bread to dip in it but more like cracker sided. Also I would use much less onion and add in some sun dried tomatoes.
