I went to the health food store today to pick up a few things and saw "sprouted tofu," made by a company named wildwood. Of course, sprouted soy beans are not the only thing in the ingredient list and it's def not raw, but I just found it interesting and a sign of the influence of the raw foods movement, perhaps? it's advertised on the package as having enhanced nutrition and easier digestability.
i find this quite inspring to see that some companies are making little steps to make their products healthier, even if it's tofu. it's a nice start :)
