View Full Version : I've got loads of green peppers from store sale rack.

I'm trying to figure out what to do with them.
Any suggestions will help.

When I get lots of them all at once from my garden, I'll cut them up into small ready to use pieces, put them in a baggie and throw them in the freezer. Then when I'm cooking for non raw foodist I'll use them in whatever I normally use them. For me I'll put them in dehydrated crackers etc. the texture does change after they thaw, just like most veggies do.

If they are still crisp you can cut them in chunks and use them as chips for nacho cheese made as a dip. If they are not crisp, I don't know...

Why not pickle 'em? Use some ACV, some fresh herbs, dash salt, maybe dash of sweetener...whatever mix you want. Let 'em sit for at least a day or two, longer even better. Then you can add them to wraps, salads, soups, eat 'em straight...etc.

I never thought to pickle them, great idea.
Wow, can't wait to do that, i like pickles:D
Also, i never thought of adding them to smoothies would work.

Have you tried pepper soup?
Here's the recipe:
1 cup lukewarm water
1 tsp. honey
1 pepper (red, green, yellow, orange, whatever you prefer)
1 heaping tbs. coconut oil
Blend in a high-power blender until it is warm, smooth, and the coconut oil is blended into the soup. It's great plain, or you can add whatever other spices/cut up veggies/rehydrated seaweed pleases you. Enjoy!

BTW, I recommend adding salt to taste to the soup, and you can use frozen, thawed peppers for the soup.
An avocado is also a nice addition to the soup.
