Will it stop crystals from forming, or make it creamier?
How much do I use?

Yes! It is used to make it creamy.

As Walnutty said, it's an emulsifier and used to make ice cream and other products smooth and creamy. You can add some to your smoothies and nut milks too, bearing in mind that it's not raw.

ya its an emulsifier that keeps fats and non-fats together. its been known to homogenize cholesterol and maybe fats into smaller particles.
