I had a young baby coconut the other day and surprise I actually liked it. I was about to swear off them forever, b/c the first two I tried about 1.5 years ago must have gone bad... they were awefull. But I tried again, and yup it was great!! However, the flesh wasn't soft... but actually pretty thick... like 1 cm thick. So any ideas what I should do with the meat??

oh man theres so much to do with raw coco meat. i would suggest either blending it up with some cacao and sweetner and making chocolate milk. or making raw ice cream.... if you use coco meat it gives it that creamy texture you get from dairy ice cream.
you can use coco meat in about every dessert you can imagine. it adds the perfect texture. enjoy!!!

I second coconut meat in desserts - especially cheesecake (less cashews or other nut, more coconut!!!) Also amazing in drinks, shakes, smoothies, and puddings. I usually use thick coconut meat for noodles though. It is thick and will slice well (though when I want noodles, that is when I get the coconut with the thin very young meat- go figure!!) I pull out the meat in one piece (or as close as it will come) and slice it into noodles - I usually use it for thai style noodles with shredded veggies and spicy almond sauce!! I actually have a pic of it on here somewhere.

I love to drain the water and scrape the meat into one tupperware type container and then when I make a smoothie, I add half the water and half the meat and then there's more for another smoothie later.
