I recently made two posts, one about a recipe to use mature coconut, and one about making energy bars, well, I managed to get those two things done at once: Energy bars based on mature coconut meat.
So far I made a lime one and a chocolate mint one, again this was my first try so measurements are approximate:
Meat from one mature coconut
About 1/4 to 1/2 as many fresh dates as you have coconut
That's the base, now for flavorings:
Lime: Juice of 1/2-1 lime
Chocolate mint: Few tbsp chocolate powder, to taste, about 4 drops peppermint oil, to taste
You can also easily create your own flavors with different fruits, spices, etc.
Process all ingredients in food processor until finely ground. Dough is not very sticky but that's ok. Press the dough either in cookie cutter shapes or spread a 1/2" thick layer on dehydrator sheets, compress the dough by pressing down firmly on it for it to stick togheter, and dehydrate several hours, to desired consistency or you ould always have them fresh.
I used coconut as the base as it is probably the healthiest nut, the best tasting nut, and the cheapest nut there is by far ($1.29 gets you over 1400 calories)!
