View Full Version : how long do pureed dates keep in fridge?

I just pureed some dates to use as sweetener, and since the dates last in the fridge for ages, I figured the puree would last for ages as well -- at least a month or so. But then I read in another thread here about using the soak water from dates, and that it only keeps a week in the fridge. Does anyone do this, and does it go bad? Thanks!

What a great idea! I think I am going to do that also...have date puree ready to use. I don't have an answer for you, but would also like to know how long it will last.

My soaked dates have been in the fridge for longer than a month,shorter than 2 months and they are fine. I did this about 4 months ago and at the top of the jar there was mildew, but the dates were fine. I threw that out b/c there weren't many left. I do this all of the time and they are fine. It's great to throw in smoothies on the fly.

I read in a book that pureed dates or date paste will keep in the fridge a week or so, but if you want to keep it fresh longer, freeze it, or make small batches every week.
