So Yummy!!!! It's dancing, healthy, happy food, teenage daughter approved. :p
If your missing regular old-fashioned pies, the crust came out close to a regular pie crust.
Tart Crusts
1 cup of cashews ground into a flour
1/2 cup raw oatmeal ground into a flour
3 Tablespoons of white raw coconut flour (or add more cashew flour)
2 Tablespoon of fresh raw golden flax seed flour
1 heaping Tablespoon raw Tahini
1/4 cup of raw Agave or to taste
2 Tablespoon Vanilla
2 pinches of Himmalayan salt
1/4 cup of coconut oil.
Enough water add by the tablespoons until the dough forms a workable ball.
Blend in food processor. Have several 4 inch tart pans lined up. Oil with coconut oil and sprinkle lightly with raw date sugar. This helps the crust keep from sticking. I chilled the dough about 1/2 to 1 hour. (probably not necessary) either roll out dough or press into the tart pans. Dehydrate until the crust has a cooked crust dry feel. About 2 hours or so depending how thick you make it.
Rich, Creamy, Dreamy, Carmel Filling
5 dates soaked in 1/4 cup of water.
1/4 cup of Maple Syrup
1 tsp. of vanilla extract
pinch of nutmeg
1 Tablespoon of Cinnamon or to taste. Start of with 2 then gradually increase. The cinnamon helps to give the carmel taste.
pinch of salt
3 Tablespoons of Cashew Butter
Add the dates and soak water to the blender along with the liquid ingredients. Then add the spices and salt and blend. Next add the cashew butter and blend. If necessary add extra water by the tablespoon to make the blender work. I almost overheated my vitamix.
Next, In the Food Processor
take One Granny Smith or a Tart Apple that has been diced and pulse until fine chunks.
Then, Take the Carmel filling and put into a mixing bowl. Fold in the Apple and add about 1/2 cup of chopped pecans to the mix. Taste. Yum You can eat this part straight! Then palce in the dehydrator to start softening until the crusts are done.
When the crusts are done, pour the filling into the tart shells and enjoy.
Top with raw vanilla ice cream or Vanilla Creme.
I had it for breakfast, lunch, and dinner. So yummy, so satisified. I wish I had a digital camara so I could show you. Loving Raw!!!
