Since I'm trying to save money I've been eating a coconut per day, which replaces 2 meals (over 1400 calories) and costs only $1.29, so I have 2 meals at $0.65 every day since about a week now.

However, it's getting boring. I'd like to make things with the mature coconut meat, but don't have many recipes.

I do have juliano's cashew fudge cookies recipe which has a lot of coconut meat in it but it has maple syrup which is extremely toxic and I easily feel "poisoned" after 2-3 of those toxic cookies. Can they be made with Agave it will they not dry (maple syrup dehydrates, agave does not).

I really hope there's a way to make his recipe, and I really hate the fact he uses ultra toxic maple syrup when he could use WAY less toxic agave (I've never been able to take enough agave to feel any sugar poisoning at all, about 1/4 cup of maple syrup will make me feel poisoned for quite a while).

Any other mature coconut recipes would be great.

Thanks

Maple syrup is pure sugar, it's more dangerous than smoking, you can tell it's extreme toxicity by how you feel after even a relatively small amount.

Anything that spikes your blood sugar like maple syrup is extremely damaging and strongly contributes to cancer, heart disease, diabetes, crohn's disease, obesity and more, and as Dr Mercola would say, it's like "slamming your foot down on the aging accelerator".

I tried mature coconut meat in a smoothie once but the fiber makes it undrinkable (you take a small sip and the fiber seals your mouth shut, making it IMPOSSIBLE to drink, you'd have to eat it).
