View Full Version : Thai Coconut Curry Kelp Noodles W/3 Types Of Mushrooms

Woke up hungry, as usual. Invented a raw thai curry coconut noodle dish with 3 types of mushrooms. You're gonna have to eyeball the amounts coz I tend to go with "a little of this and little of that" and not use measurements. Sorry.

Stick in the vitamix-

Meat from 3 young coconuts
water from 1.5 of them or eyeball it
2 cloves garlic
1/2 chili pepper
minced lemongrass
cilantro
salt
agave
saffron threads dissolved in hot water
nama shoyu
pepper
curry powder
tumeric
coriander
wee bit of vinegar
olive oil or coconut oil to give silkier 'mouth feel'

BLEND ALL TOGETHER, ADJUST SEASONINGS.

IN THE MEANTIME, PREPARE 2 PKGS KELP NOODLES LIKE ONE USUALLY DOES, RINSE WHEN HALF SOFT. TOSS WITH SAUCE.

ADD:

slices of baby portabella
maitake or enoki mushrooms
slices of shittake mushrooms

mix.

GARNISH WITH:

chopped green onion
mung bean sprouts
pine nuts or chopped cashews
drizzle of sesame oil

I stuck the entire mix into the dehydrator to warm and soften the noodles further.

omg that was GREAT. It can stand a bit of tweaking (the recipe), but it really was a great break from the heavier nut sauces.

I am pretty picky about my Asian style foodstuffs (I am half Asian)... My tummy is OVERLY happy at this moment, though.

One thing I *DID* notice from eating all the kelp noodles-- IT GIVES YOU HORRENDOUS GAS.

I hope I am not the only one with this affliction.

oh cool! i love st. joe, you are fortunate to be so close to the beach! it's nice to know there are some other raw vegans around here, we really should have a meet-up community!

I am in a murder mystery tonight and tomorrow at Berrien Hills Country CLub...

It is SOOO NICE HERE now. They turned downtown BH into an artists colony and whirlpool is turning the rest into a jack nicklaus golf course.

My folks live in coloma and I live in st joe.

None of my family lives in Michigan now! We have spread far and wide! My brothers still live up here, but everyone else is in other states.

Sounds as though many changes have taken place in the past many years. In some way I do miss some of the things like fresh grown fruits! Alaska is beautiful but is lacking in some of the food areas.

Our family doctor used to live in Coloma (isn't that where "Deer Park" was?) and I was born in the hospital in St. Joe!
