View Full Version : Help making a raw fudge that is dry like a chocolate bar?

Hello,

So the other day I went to a raw food restaurant the other day and I got one of their fudge pieces that was out of this world. I'm trying to figure out how to make it and had two failed attempts yesterday so thought I'd ask for some ideas or recipes to try.

I'll describe it the best way I can: it was cut in a square and was sitting under a food dome (so it's not refrigerated) and it had raw cocoa in it for sure and wasn't like raw fudge I've had before that is more on the wet side. This was a dry version that was pretty hard and tasted nougat like almost. I've never had mesquite or lucuma so have no idea if those things are in there. It was just superb and I am desperate to make it myself. It was more like a chocolate instead of a fudge in consistency.

Any recipes out there I should try?

I've made Rawvolution fudge and that's way too wet, Easter chocolate has to be refrigerated and I've made that many times, also tried Russel James Easter Egg Chocolate recipe but that was a disaster.
