I made something last night... and it was sooooooooooooooooooo good.

I took two sweet potatoes... and put them through my fry slicer. so i have french fry shapes.

Then I put them in a large bowl... drizzled them with olive oil... and then added a little garlic infused olive oil.

lots of salt
curry
cayenne
a good squirt of agave

Mix and marinate for about 20 minutes.

Now place the fries onto a teflon sheet and dehydrate at max for two hours and then reducing.

Take them out in another hour or two... still crispy...

Save the left over marinate as gravy/dip. OH MY GODDESS THIS WAS AMAZZZING!!!

So today I made it again. This time I added more of the spices plus cumin and a little grated galanga. I tasted it before it went into the dehydrator and it's amazzzing.

i forgot... i added some galanga today as well. finely grated. not too much as it's very spicy and strong in flavour. looks kinda like normal ginger but without the hard skin.

What were the dehydrator temperatures you used, recycling goddess?

i put it at high for two hours and then down to 107. i kept checking on it... take them out when they are still crispy - they taste better that way. ;) but they will soften up for you if you want.

to me fries need to be crispy though!
