Anyone got a good recipe???
I have been craving delicious kimchi for a few weeks now!

sure. i like to use cabbage, bok choy, carrots, some kind of hot peppers, garlic, ginger and scallions.

just ferment like you would any vegetable ferment... layers of packed finely chopped veggies and spices, sprinkle layers with salt, pour water over to cover, cover it with a plate with a weight on top and let it sit for a few weeks.

there's lots of info online about vegetable ferments if you need more help, but that's it really.

There are many various types of kimchi and one of those I like is the easiest to make. Daikon radish julienned with a mandolin, sprinkled with salt to get the water out, then just add chili pepper, scallions, apple cider vinegar, sesame seeds and there you have it! You can eat it immediately with a little sacrifice to taste or wait a day to eat it. If you want I can look up the exact recipe I used a while back.

All the other kimchis take too much time and ingredients to make and then to ferment... to make only for myself that is.
It's a pity I have to give up kimchi now...i can't imagine kimchi without rice so until i can eat kimchi without craving rice i better stay off haha

There are also the 'soup' kimchis that don't use chili pepper and have a clear water but I doubt that's what you're looking for :)

OO! I would love the recipe with the daikon radish! I marinate daikon and eat it as salad alot, but have never had kimchi with it - just the plain cabbage one. It sounds good though - maybe too good as I might not wait until it ferments before I sample it (or eat it all)

Beckx - though I have eaten kimchi alot, I have never made it myself. I have this paranoia about fermenting my own stuff - I always worry I am doing it wrong and I will poison myself -haha. I will check online about fermentation - maybe it will make me less stressed about it. It would be cool to have my own supply though - maybe a mini kimchi fridge>>>?? :D

its pretty hard to do it wrong, honestly... and you'll know as soon as you put it to your lips if you messed up. the two biggest things to remember are using clean materials and using enough salt/salt substitute. check out wild fermentation by sandor katz, http://www.wildfermentation.com, the book is great and there are resources on his site.

also remember that you can store your veggie ferments... so its completely practical to do a gallon batch even if you're the only one eating it. put them in a pretty jar and they make good presents, too.

i never like the 'instant' ferments much myself... they taste more like salads than pickles, but it could be just me.
