Hello all - :)

I'm Gaijin Girl...and *just* started my own Raw 30 Day Challenge (as of February 16th, mid month.) I've been flirting with raw food for over a year now, but something just recently clicked and I'm willing to give it a real go.

I've got Alissa's book (have also read and liked Ani's book).

And I just did my first "official" Alissa recipe...the Fettucine Alfredo. Thing is, it made a HECK of alot of sauce. So my question is, how long can you keep sauces in the refrigerator? (First thoughts on the book... Pros: the sauce is DELICIOUS, wow! Negatives: I would have loved a list of how long things keep, maybe would have preferred smaller portioned recipes, and definitely a more *portable* book. It's real hard to carry on the subway.)

All that aside, the fettucine is amazing, and I'm really excited to give this a go. Thanks in advance for any info on this. (I hate waste...!)

Welcome to the truly wonderful world of raw. My experience has been that different recipes last different lengths of time. I always toss things if not used within a week. Nut milks are best used that day or the next at the latest. Since I'm preparing for just myself, I usually half the recipe and sometimes go 1/4 if it makes tons.

The alfredo is fantastic. it's really good with some dehydrator warmed brocolli drizzled with a little raw oil. Or you could add some baby peas. Love this with sliced tomatos on the side.

Hope this helps a little.
