Hey guys, I've been making almond mylk lately and have all this almond pulp leftover. What can I make with it so it doesn't go to waste? ;)

I dehydrate it until dry, grind into flour with a coffee grinder or my Vitamix and then use in other recipes such as cookies, pie crusts, grawnola, etc.
Some have said they freeze it and use in recipes as it is (after thawing, of course) and others have said they use it as an exfoliant for the skin.

There is an ABSOLUTELY AMAZING (and very easy to make) scone recipe in the Beautifully Raw 2008 Calendar from our very own, MaRaw. It has become my dh's new favorite breakfast addition.

It does sounds like a good recipe so please do post it.
Breakfast can be difficult at times and green smoothies do help but more can be added.

From the Beautifully Raw Calendar (www.therawtable.com) - April 2008
Lemon Blueberry Scones (recipe provided by Elaina Love)
4-1/2 c almond pulp
1 c coconut oil
1 c flax seeds ground into meal
1/2 c agave, honey or date paste (I used agave for 1 batch, honey for the other)
1 T lemon zest
1 tsp. sea salt
1 C dried blueberries (the first batch I made had dried cranberries because I didn't have any dried blueberries)
Mix the almond pulp and the flax meal together BY HAND in a large mixing bowl. Add the remaining ingredients and mix well. Divide the batter into half and shape into two 1-inch round loaves. Cut the circular loaves into 8 small triangles, for a total of sixteen pieces.
Dehydrate at 135 degrees for two hours. Check the texture of your scones. If more drying is needed, adjust the temperature to 105 degrees and continue dehydrating for an additional two hours. (I live in a humid climate and found I had to dehydrate 8 hours or longer.) Store in refrigerator for up to a week (if they last that long). Serve with honey or jam and fruit. (Personally we just eat them plain, warmed from the dehydrator).

PS Bethanie, I find I need something mid-morning after the green smoothie. These, along with MaRaw's Banana Pancakes or Ani Phyo's Dreaming of Donut Holes have become my other morning meal. (I reduce the amount of dates in the Donut Holes because they can be really sweet with all of the dried fruit)
I just found this thread because I made some almond milk and didn't want to waste the pulp. I am definitely going to try this recipe... maybe without the dried blueberries, though. I have some dried mulberries I could use instead...
Just a quick tip in case it's useful to someone else. I wanted to be sure lemon zest was the outside of the lemon. I found this culinary dictionary that is alphabetically listed and had all sorts of good info in it. :) http://www.recipegoldmine.com/glossary/glossary.html
I tried this recipe yesterday, and it was AMAZING!!! BETTER than a scone, and I looooved scones once upon a time!!! This recipe is GREAT to have as a heavier filling food on the road or just in the middle of the day when it's not a good time to have a meal but ya need to be held over.

WHOA! I tried these last night and they are soooo tasty! I omitted the flax b/c it does bad things to me and omitted the salt too. These are delicious!!! Even my SAD partner who usually sticks his nose up at my raw food loves these.

Oh, pics would've been nice but we gobbled them down without stopping to get the camera ;) They actually resemble SAD scones exactly, I made them into mini sized triangles...and I could've left em in longer to be drier but we liked em kind of moist and more doughy. They were in the dehydrator for 2 hrs at 135 and then 6 hrs at 105.

I have been experimenting , I just got some raw cacao powder at the health food store, and made some Chocolate Something..( not sure what to call it) fudge, brownie?? tastes pretty good
1 cup ground , dehydrated almond pulp
1 cup ground dried coconut
1/4 cup Cacao powder
1/4+cup agave syrup
1/4-1/2 cup chopped almonds
1/4 cup coconut oil
Mix and place in glass 9x9 put in freezer ..
I didnt grind the pulp as much as I would have wanted ... gave it a rice crispie crunchy feel in my mouth.. but so yummy.. I usually dry my almond pulp and save it in the refrigerator till I have enough for something

My family was having pizza the other night and I only had a few things around... but WOW i found an awesome recipe on accident.
almond pulp
sundried tomatos soaked then chopped in processor
tahini
sea salt
dried red pepper flakes optional
mix it all up then wrap it in a chard leaf...
holy crap was it good... I usually have a hard time on pizza night but this cured me...
and then I thought it would be soooo good with olives and spinach!!!
i am gonna have fun with this one. The almond pulp ended up like parmesan cheese!!! in the whole deal!!!
