OK, go grab your vitamix, folks. I rediscovered this recipe in my notebook. They honest to goodness taste like gourmet chocolate truffles. A wonderful treat, but inherently self-limiting. I have the gnarliest SAD sweet tooth ever, and I can only consume one or two of these per day. They are extremely satisfying. Originally from Gone Raw.

Chocolate Truffles (obviously, all the ingredients should be raw!)
1/2 c chopped cocoa butter melted in dehydrator at 105
1/2 c cocoa
1/2 c carob
1/2 c cashews
1/2 c agave nectar

Put everything in Vitamix and blend. Add any flavorings you might like. My fave is a sensual combo of chipotle pepper, orange zest, cardamom and cinnamon. Also fully awesome w/out any add ins.

Scoop out the chocolate onto a piece of aluminum foil or parchment to cool slightly. Roll into balls with your hands, then coat with extra cocoa powder.

I just made a double batch, decreased agave slightly, used 2/3 c cocoa and 2/3 c carob. Everything else the same.

Gurm...so yummy it feels naughty!

Are you refrigerating them so that they can harden or become firm?

Lavendar, they will cool to a nougaty texture at room temperature. This is when it's easiest to roll into balls. Dust your hands with cocoa so they don't get too sticky.

I store em in the fridge, but as with any fine chocolate, I bring them to room temp before enjoying.

Vitamixing them is the magic process that makes the texture exactly like regular gourmet truffles.

Thanks... I think I just might have all the ingredients here... I just gotta make time to try them... what a great little extra to throw into my meals next week...:)

These sound wonderful and I just ordered my 3HP blender tonight so I can't wait to try them.

I am having difficulty finding raw cacao butter or powder. I have the nibs and have ground them in the coffee grinder. If I do this, does it count for both cacao butter and cacao powder in the recipe? How much should I add?


Any help would be great!

I'm trying these today. The only thing is I'm using pecans (since that's all I have, oh wait, I have some walnuts)..... I'll be back to report my outcome:D
