Well, it's not fudge but it's the best dessert I've ever had in my life, raw or SAD.
Superfood Cacao Coconut Haystacks:
- 6 oz. Virgin coconut oil
- 1/4 cup cacao butter
- 3/4 agave nectar more or less to taste
- 1/4 cup raw honey
- 2 tsp vanilla extract
- 1/4 tsp Himalayan salt crystals
- 1/16 tsp cayenne
Combine all above ingredients in a food processor fitted with an "S" blade until liquefied.
- 1 cup raw cacoa powder
- 1/2 cup raw cacao nibs
- 1/2 cup goji berries
- 2 cups shredded coconut
- 1 1/4 chopped Brazil nuts
- 1/4 spirilina
- 1/2 cups raisins
- 1/2 chopped Inca berries (we substituted cranberries)
- 2 Tbs. maca powder
Mix all above dry ingredients in a bowl until well combined.
Stir wet ingredients into dry ingredients.
Created medium-sized scoops and place on cookie sheet.
Put cooked sheet in freezer for 10-15 minutes to harden and enjoy!
Store in a glass container in the fridge, freezer or both.
Will last 4-6 months, however they are likely to disappear within the first week or two.
Truly Amazing!
