it's in the fridge as we speak, best recipe ever!
I bought 2 24oz bags of unsweetened unsulphered coconut, I'll never run out of fudge now, muah ha ha ha!

Gladly! I found it's best to halve the recipe, that way it processes easier, and turns out really creamy!
6 Cups Shredded coconut
1 Cup Cacao
1 Cup Agave
12 Drops peppermint extract (I omitted this and added vanilla extract)
Again, I only used 3 cups of coconut and found that it was easier to process, but anywhoo- blend/process the coconut until it turns into a buttery consistency (it might take a min or two, but it will get there) eventually it will probably turn into one big ball. Add cacao, agave and flavorings if you wish, you can add nuts too, my fiance requested that, process till smooth.
I put a sheet of waxed paper over a rectangular cookie sheet, then blobbed the fudge on there, covered it with another sheet of waxed paper and spread it out between the two, this was the easiest way to get it flat and uniform, you can also make little balls though...
Refrigerate or freeze, I freeze mine and it's so good and chewy, my whole family loves this!

This sounds great. I have to get some agave! Does it get creamy? Just wondering. Does it actually process in a blender? Seems like it wouldn't blend. I only have an Oster blender, which is VERY powerful, even blends food, but don't know if it's as good as a VM. I need to know. I want some Valentine's chocolate....NOW!!

well the coconut never became a ball... as it was dried and shredded coconut... but i did add everything else and some vanilla extract... it's almost done processing now...

This sounds great. I have to get some agave! Does it get creamy? Just wondering. Does it actually process in a blender? Seems like it wouldn't blend. I would go with a food processor if you have one, it seems easiest that way.

when I did the recipe the first time and only used half the recipe, it never really became a ball either, I just made sure the coconut was broken down and really creamy, the second time I made it with the full recipe there was a huge ball, I thought I was going to kill my Cuisinart!

okay it's in the fridge... i am soaking some goji berries in the dehydrator in a glass of water (speeds soaking) and then i'm going to put them and some raw cocoa nibs into the food proc. and then sprinkle them on top of the fudge! mmm mmm good.
