Everytime I make them they have a bitter after-taste, what am I doing wrong?
I use fresh corn,
ground golden flax
a little salt,
and usually a cup or so of ground corn meal...
could it be the corn meal?

Erin, not sure the corn meal is raw....but i always have to add lots of salt (i use sweet frozen corn for ease). Alicia

oh the corn meal I use is organic and it's just dried ground corn so I wasn't that worried about it

it's just that the dried ground corn was dried at probably a high enough temp to render it un-raw. no, it doesn't taste bitter at all - let me know how it turns out if - use the recipe from Alissa's book - let me know how you make out with it.

I have heard that fresh corn has given some recipes a 'bitter' taste -- even Alissa uses frozen corn for some recipes. I also use fresh frozen sweet corn. You can probably find some in the hfs - and if not -- I have used frozen corn from the grocery store a LOT!.... I've always said - I don't sweat the 'small' stuff'.... making wise choices is more important I think...
I'd rather make my own corn chips out of frozen corn - than eat Lay's potato chips or store bought chips with bad fats!!
try the recipe in Alissa's book --- it's wonderful!

the same thing with dried corn being dried at a high temp can be said about frozen corn being cooked at a high temp before it's frozen, 6 of on 1/2 a dozen of the other

starfire I'll try some frozen corn next, I was just dissapointed, I finally got the recipe down and then it came out bitter- they looked so pretty too... I was using fresh corn cut from the cob, back to the drawing board we go...

...Here is a very yummy recipe that makes a crunchy corn cracker...courtesy of my Raw and Living Foods Practioner:
Corn Crackers:
2 cups of corn
1 cup ground sunflower seeds
1 tsp. celtic sea salt
1 tsp. onion powder
1/2 cup water
2 tsp. kelp powder
mix...make into patties/crackers...dehydrate!
*I used frozen corn, dehydrated it first, ground it up, and then used it...this was like cornmeal.....
*I used kelp seasoning from the health food store...
*I've heard that Cascade brand frozen veggies are not cooked before being frozen.......but I use Meijer's if it is all I have around....

Corn Chips were about the only I could get to come out of my dehydrator perfect! :rolleyes:
I took frozen corn and sea salt. Blend in your food processor.
Then I took my cheap set of biscuit cutters and remove the plastic top handle (on mine they just pop on and off...so I can re-attach the handle if I want). Now you have a metal round mold.
Take a spoonful of mixture and spread it around in the bottom of your mold...lift mold and you have a perfect circle corn chip. Of course you have to repeat this until all the mixture is gone and then dehydrate...but they are fabulous. :D
For a zestier...more colorful version...I add red peppers to mine.
Just make sure the chip itself is thin...and it will crunch when you are done.
I find that if I put flax in anything that is dehydrated...I don't like the flavor.
These are lighter and less sturdy, but the flavor is out of this world. (No dip or salsa needed!!!)

Everything Iīve dehydrated with corn in it (freshly frozen) comes out bitter.
Donīt know why.

I haD the same problem... When I switched to using Frozen Organic Corn in Alissa's recipe, it immediately became my ABSOLUTE FAVORITE SNACK!!!! :D

that is so good to hear Renee, I just put a batch in the dehydrator. I finally found a triangle shaped cookie cutter, and they look just like cool ranch doritos! I'm so proud, lets just hope they taste good...
1 C ground golden flax
2 C frozen thawed corn
water to blend
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp salt...
I'll let you know tommorrow whether or not they worked, the cookie cutter is a great idea though!

ShelShel, those sound great. I'm only one month old to eating raw- I'll have to try them. I thought I was the only one that didn't like the taste of flax seed in anything I dehydrated.

Hmmm I've actually gotten to the point where I like the taste of flax. The more flax crackers I can make using different recipes the better. i guess I'm just weird!!
Now, if I take a gelcap of flaxseed oil .... nah!!!!!
