I have no nori sheets at the moment (I know they aren't 100% raw, but I dont care! :p ), so I'm thinking of using lettuce leaves instead.
Whether or not I prepare them before I go to work tomorrow, I'm not sure how to stop either the leaves, or the finished munchies from going nasty.
Has anyone got any advice?

I make rolls alot for work, and I prep the veggies (slice or julienne them) and veggie pate in 2 separate containers, and put the lettuce (or chard, or collards, etc etc) in a baggie with a paper towel and roll them last minute. I haven't pre-rolled the night before, but I am assuming it would get mushy (and I like them fresh)!!! Also, if I am using avocado, I bring it whole and slice last minute. This goes for salads as well - I prep everything and add the avo and dressing right before I eat!!
I also do this with nori rolls - I prep ahead of time and roll last minute!

if you get the RAW nori sheets (they are BLACK, not green, green is toasted), they should be 100% raw as far as i understand it.

Yes - the ones I buy are supposed to be sun dried and raw - not toasted.

Yes you can buy raw nori; as it is fragile I suggest keeping a packet at work in your desk if you can. Yes I agree with CrazyDelicious to roll and assemble at work. I carry items with me like dressing & agave in little jars.

BTW, WELCOME to RFT! :D
