Is unsweetened, unsulphered coconut ok to use?

At times I have used an organic unsulphered shredded coconut -- I do the best I can - ya know? If I can get the ingredients FABULOUS!!! but if I can't and I want to make a recipe -- I just do the best I can!

or the alternative is -- get a more mature coconut and dehydrate it yourself! time consuming - but it works!
