Benihana is an amazing Japanese restaurant chain in which the chefs cook the food right in front of you. I used to go there when I was a cooked-fooder. One of my favorite aspects of eating there was this delicious ginger dressing that they put on the salads. I would ask what was in it when I would eat there but they didn't really understand me. So finally, I googled it. I've provided two recipes, the original and the 100% raw version with the substitutions that I made. There really aren't that many and the raw version tastes almost exactly like the original. I hope you enjoy!
Original-for those in transition
1/2 cup onions, minced
1/2 cup peanut oil
1/3 cup rice vinegar
2 tablespoons water
2 tablespoons fresh ginger, minced
2 tablespoons celery, minced
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons lemon juice
1/2 teaspoon garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
Raw

4 teaspoons Nama Shoyu

2 teaspoons lemon juice
1/2 teaspoon garlic, minced
1/2 teaspoon sea salt
