View Full Version : Gonna try making the calzone

I thought I would try making Alissa's calzone recipe this weekend. But, I've got a couple of questions. 1. how long does it take to get sprouted buckwheat? 2. How many servings is the calzone? Any suggestions, tips, etc. would be appreciated too. This sounds delicious and I can't wait to try it.

Well, I'm definitely not the person to ask. I just posted my calzone disaster story the other day. You may want to check it out just so you can NOT do what I did! :)

As far as buckwheat goes, according to Alissa's sprouting guide in her book you just soak the buckwheat (this is for 1 cup) for 6 hours, drain and rinse for 1-2 days and you're good to go.

Holli, I'm keeping my fingers crossed that I don't have those problems with mine! I'll post the results and take a picture, hopefully it will be good.

It's been awhile since I made this, but as I posted to Holli....I halved my bread recipe, this recipe makes a HUGE crust.

Then when you start dehydrating, I spread it out, dehydrate the crust at 140 for about an hour, then cut your temp. down to about 115. I always deh. my crust till it feels dry enough to flip it easily. Then I dehy. some more BEFORE I added the toppings and folded it over. I really don't like my foods mushy, and I feel like this method helps keep things from fermenting.

Buckwheat sprouts really quickly...like in a day. Soak overnight, then I put mine in a colander and rinse a few times the next day, by the 2nd day your buckwheat is ready.

If you have any crust leftover....like too much to make into a calzone crust, spread it out and sprinkle with alittle extra seasonings.....GREAT CRACKERS, or even make little round pizza crusts, and freeze those for later.

Mmmmh.. I was craving this yesterday. I think I will have to make it now!!

When I make it, I use half the entire recipe and make 3 mini calzones out of it. I also add in some red pepper for a little sweetness. YUM!
