View Full Version : Will my nut cheese ferment if I didn't soak?

That's basically the question...
I'm going to make a raw cheesecake and I just blended raw un-soaked cashews in water and was going to let them sit out overnight to ferment as per the recipe. I don't have cheesecloth, so the bowl is covered in foil. I'm clueless on fermenting...any tips?

Yes, it will ferment, though you don't need to ferment the nut cheese to make cheesecake - the taste may be too strong. Most fermentation is done by using Rejuvelac (not recommended by some) or a probiotic capsule. If you don't have cheesecloth, a clean dish towel is preferable to foil. The mixture needs to breathe and foil shouldn't be in contact with your food anyway. Russell James has a great cheesecake recipe in his latest newsletter. I don't have time to post the link now.

:eek: ! I got the recipe on youtube from the Sexy Bitches Like It Raw....the said that to get that "cheesecake" taste, I should let the cheese sit out a night--or two! Oy...I hope it tastes ok. I've been obsessing about making it for a week. :p

I made the same recipe YUMMY!!!! I only soaked my cashews for 4 hours then I let it sit out overnight. I mixed everything else up together and put it away. Then the next day when I made it everything was ready I just had to mix and pour and put back in the fridge.

I did let the cashews sit out overnight, and they were a little "tangy." overall, i would have added way more sweetener AND lemon to mine...but i like BIG flavor. i'm going to try it again w/o leaving it sit out.
your pic looks yummy. :) what did you crumble on top?
