I know, I know, get Alissa's book. I'm going to, just haven't had a chance yet.

On Natalia Rose's plan, some raw cheese is ok, but she advocates some non-raw stuff as well. Is raw cheese considered a raw food? I've been using some organic raw parmesean and am loving having it on salads. BTW, I was not vegan before I went raw, and am doing this for health reasons, not because I have an ethical problem with animal products.

Also- what's the deal with purified water? Why not tap? Where do you get it? I've read drinking water out of plastic bottles can be very harmful, and I don't like the environmental factor.

raw cheese is a raw food however, Raw Food Talk is a raw vegan/vegetarian forum so we do not advocate nor get into discussions about raw animal products such as raw dairy, raw eggs or raw cheese per the Rules and Guidelines for Posting (http://rawfoodtalk.com/showthread.php?goto=newpost&t=33779) (check it out please). This forum is mainly for the approach to raw according to Alissa's book and dvd and not really other's programs such as Natalia.

In Alissa's book she has many recipes for really Raw cheeses. :) They are mostly nuts that are soaked with a few other foods tossed in and blended to give the flavor of cheese. From there you can dehydrate it into slices...or spread it like ricotta. These are the raw cheeses we will talk about. ;)

Also, the water issue...isn't really related to raw so probably won't be discussed much either. Whatever water you chose...if it's plain...drink it. It's raw! LOL :D

I just want to sneak into this discussion and suggest you read The China Study, or just youtube it. Dairy is pretty doggone harmful to the body....ok then! Over and out. ;)

I was a huge cheese eater when SAD. I now love nut cheese. There are lots of great recipes in this forum. My favorites are Alissa's nacho and her creamy cheddar. I like to dehydrate the nacho cheese and crumble it on my taco salad. One thing to note is that the longer you eat raw the more you like the tastes of raw foods. Eating a SAD keeps one wanting more SAD because of the addictive chemicals in the foods. The more time away from the chemical foods the better raw foods taste. I didnt like any of the recipes I made in the beginning so I just ate a lot of fruits and salads. After about 3 months I noticed that I was craving raw things that I had never liked in the past. Now that Ive been raw for a year and a half, just a bite of something sad is like a drug to my system. Just eat raw and give it a little time. Until you get Alissa's book, just do lots of reading in this forum. There is lots of love and help here.

There's some stuff called Parma! that is raw vegan "cheese." I think it's made from mostly walnuts. I ordered some online, but I haven't tried it yet. It might be good as a replacement for the parmesan on your salads.
