View Full Version : Undehydratable agave nectar?

I have an amazing sweet spiced pecan recipe in Ani's recipe book, it says to make date cyrup, or use agave or maple syrup as the sweetener.

I did it with maple syrup the first 2 times as the health food store was out of agave, it orkd fine, this time I did it with Agave and it's been there for a few days non stop and is still liquid. I should also mention I quadrupled the recipe because it was so good so I think this means I have 1 cup of agave spreaad on the dehydrator tray with the pecans and spices. But I don't think it's just because I quadrupled it because it's been several days and really hasn't changed much.

So is agave nectar undehydratable or what?

Obviously it's dehydratable ( is that a word? ) because you're doing it. I'm thinking your question is, will it harden when heated? Like honey, no. Heat it, it turns liquidy. (another non-word). I've made some great pecans like that ~ don't 'member the recipe but pretty sure I made them with agave. Came out fine. Don't know what else to tell you.

I've used agave and honey...both stayed very sticky/wet no matter how long I dried them. I use the maple, even though it is not raw...they come out very crisp and glazed. The amount is small in the recipe I used...not a problem to me. Many use maple even though it is not raw...a choice.

Well I'll try making the date syrup next time, that should dry. Otherwise I'll go back to maple syrup but would prefer not to.
