Hi. I just received Alissa's book and DVD. I am very excited about this new way of eating. I actually started 3 weeks ago. I really did enjoy watching the DVD and can hardly wait to start using some of the recipes. I happen to notice that Alissa had a nice assortment of nuts in glass storage jars on her counter tops. I always thought that raw nuts were supposed to be kept refrigerated. Does anyone no how long you can store nuts out of the fridge without going rancid? Thanks in advance!

always store them in the fridge- it won't hurt them and keeps rancidity at bay, if you're not going to use them right away you can keep them in the freezer for like 6 months!

I just received a 10 lb. bag of fresh picked truly raw almonds from D&S Farms in California and there was a note on top that stated, "DO NOT FREEZE". I am not sure why they state that, but I wanted to pass this info along.

I store my nuts in jars also but I also have more than what fits in my jars. The jars are for what I am using and the other nuts could be stored in the fridge but mine are stored right behind my jars and I've never had a problem with them going rancid. When my jar is empty, I put the bag of nuts from behind the jars in it's jar and know that I need to buy some more for putting behind the jars. I live in a rural area so it's not like I can just jump in the car and go get what I need. Judith:)

I usually buy raw pecans and cashews in relatively large quantities because i can't get to Whole Foods as often as I would like. I end up separating them into serving sizes and freezing because I have found they will last longer if I freeze them. I haven't had any problems.:D

I just got my almonds from D&S today!! I put them in them in Reynolds Handi-Vac vacuum freezer bags and put them in the fridge...I don't expect them to last 6 monthe (will be eaten!!) Handi-Vac only $10 and sucks all the air out, as opposed to spending $100 on a vacuum sealer.

I'm with jacsam on this one. I got some gorgeous glass jars like the ones on Alissa's DVD, and keep them on the counter with nuts/seeds stored in them. They look really pretty and I've not had any trouble with them going rancid.

I've stored nuts in glass jars for years and never had problems with them going rancid. I believe if they're sealed well in an air tight (glass) container you're fine. I generally don't buy too many at a time and usually go through them within 2 weeks. If I ever do receive large quantities, I will consider freezing them or keeping them in the fridge.

I keep all of my nuts in the freezer. I have my big bags of bulk nuts in the deep freeze in the garage (I live in Alaska... getting raw nuts is next to impossible, so I buy them in bulk through an organic co-op at like 10-20lbs at a time)and then in the house I keep the nuts that I've soaked and dehydrated in the smaller freezer.

I got mine at the Container Store, but now Alissa sells them on her site! :)
