You have got to try out this recipie I made up. It's the best food I have eaten in a long time.

Cashew Chow Mein

First I made a Peanut type Sauce

1/2 cup of peanut butter or almond butter
1/2 cup warm water
3 Tablespoons Nama Shoyu
3 Tablespoons Agave
2 Cloves of Garlic Minced
2 Tablespoons sesame seed oil
about 1/2 to 1 inch of fresh ginger minced
1 tsp apple cider vinegar

Add all ingredients to taste and blend in the blender. So good and out of the world taste.

Then I took a package of Raw Kelp Noodles and rinsed them in water and cut them up into manageable pieces. I tossed the noodles in the sauce which was slightly warmed from blending and the warm water. I finely chopped up fresh carrots and zucchini and tossed them in. I threw in some raw cashews for crunch. Warm in the dehydrator for thirty minutes or so until noodles are soft and tender.

They are so Delish!!! It tastes like the best chow mein ever. If I had more vegies, I would of added snow peas and marnated mushrooms and other favorite vegies. The possibilities are endless.

My teen age daughter, ate it up with gusto. :p

Hope you like it.

Try it, you will probably love them. If my teenage daughter loves it, it says a lot in these days of finky vegie eaters.

That sauce sounds great. Not sure about the kelp noodles. I'm afraid to try them. Especially since I can imagine hubby's response to their appearance! Where do you get them? I still have some Nori wraps I'm afraid to use, lol.

I am also interested in finding an alternative to kelp noodles. Can someone tell me what they resemble? Zucchini noodles? Or other spiralized veggies?

Ok, I was actually thinking about making this recipe tomorrow and substituting either broccoli slaw or spiralized something. I checked out the noodles but to have them shipped to N. Georgia costs as much as the noodles! Anyone try this with something other than the noodles?

I made this 3 days in a row eating a whole package of the kelp noodles each time. Thanks soooo much for this recipe!! It is wonderful. I'm addicted! The noodle texture really resembles cooked noodles. Amazing!

I plan on going to the health food store and picking up some more bags of noodles. The sauce would be excellent on zucchini or other type of noodles. Sprinkling on black or white sesame seeds adds an extra kick to it. I'm so glad your enjoying it.

I too can eat a whole bag of noodles with this sauce on it in one setting. I feel so full, but very satified when done.

AMAZING RECIPE! THANK YOU!!

Sorry to shout, but this just bowled me (and my SAD BF) over!
All your quantities were right on! I doubled the recipe and added 1/2 a jalapeno pepper to the sauce. I used red bell pepper, carrots, and baby asparagus as my veggies, and garnished with fresh cilantro (coriander) and thinly sliced green onions. DELISH! Thanks again!

Oh this does sound good. Any fellow UK rawfooders know where we can get kelp noodles? I can't even find a UK stockist online... maybe I need to go and have a hunt in Chinatown...

So if I were to look at Whole Foods or the like, where would I find kelp noodles? Are they refrigerated?

Wow, Thank you for sharing this recipe. I had not used my kelp noodles for awhile and went ahead and made this for dinner. I added a heaping teasp. of red chile sauce (Hot) and FANTASTIC! Will be fun making many variations of this recipe. The noodles softened so nicely--reminded me of the Thai noodle dishes I used to enjoy sad.

Beachhunter, at Whole Foods they are with the refrigerated tofu, tempeh, etc.

Just wanted to post another BIG THANK YOU for this amazing recipe! Shared it with my friend who is raw curious today. Need I say, she was instantly won over!!

How do you know which Kelp noodles are raw? I went to the website that SuBu posted and was going to order some but I noticed that it didn't actually say "raw" on them. I don't want to order the wrong thing at $4.19 a bag.

Please help!

Well I was dying to try this and can't quite afford a case of noodles plus shipping to Canada so I found the least toxic SAD chow mein noodles at the grocery store and added your raw sauce, it's awesome! I can't wait to try it with the raw noodles, I may try it with young coconut noodles, I never tried making some, mostly because the young coconuts I find have barely any meat. Thanks!

When I think of chow mein, I think of mung bean sprouts. So I'm going to try this yummy-sounding sauce on mung bean sprouts from the produce section. Thanks for sharing, sounds really good. :-)

Just made some peanut butter in my Vitamix and while all that leftover gooey peanut butter was stuck on the blades I quickly made this peanut sauce.

Amazing! And a great way to use all that sticky peanut butter down in the blades.

Gonna have the sauce over shredded cabbage, onions and sesame seeds.

Yummy!

Time2bloom4me, I can't wait to try your recipe. It sounds de-lish.

Tirza: I'm not the one to give you the dish on kelp, but I'm planning to modify the recipe to suit my families' needs. We don't particularly care for kelp. But I LOVE stir fry and chow mein. I'm just going to add a few more veggies and not worry about having "noodles."

If you let them sit for a bit in the liquid - they soften quite a bit. No rebound, lol. (Anything with some oil and some acid wil soften them.)
