When recipes ask for coconut milk, all I do is blend the meat and the water together.

Young coconuts give much more water and the meat is soft and yummy especially in green smooties with banana, pineapple and mango. YUM! They are MUCH easier to open too. Someone directed me to a video to show me how one time. It was very helpful. Try to find young coconuts if you can. I think you will be very happy with them.

I've been using the young coconuts and they really do have alot of coconut milk in them. I use the meat in smoothies also and it makes them more creamy. I love them. I just get mine at the good earth in Provo and also Agi's raw food restraunt sells them....I just noticed that your from Utah. (What part?) LOL Judith
