This weekend I prepared my first Raw meals. I was on a long fast (18 days) and during that time I ordered the Dehydrator, bought a food processor, a spiral "pasta" slicer and a champion juicer.
I made Collard Wraps and an Enchilada and for dessert a Date Nut Torte, all from Alissa's book. I had been watching the DVD non-stop while I was on my fast and felt confident in my abilities to prepare tasty Raw meals.
Alls I got to say is YUMMY!!!!!! I could not believe how good the food was and who would have thought that I would be eating an uncooked collard green and LOVING IT.
So, I'm new and still really green, but as of today, I can see being Raw the rest of my life. I know that I'll have many temptations and difficult moments, but when food tastes this good and does so many wonderful things for your mind, body and spirit, why not.
P.S. - the thing I really like about going Raw is how fast and easy the recipies are. No spending hours in the kitchen. Love it!!!!
