If I pour it into a glass jar and store in the 'fridge, how long does it stay fresh? And, typically, how many ounces can get you get from one young coconut? thx.

Every coconut is different... I've gotten as little as 6 ounces of water and as much as 16 ounces!!! (I like the 16 ounces better - lol!!)
I love coconut water so it doesn't last too long in my fridge. I was making some veggie wraps from young coconut meat so I had quite a bit of water that I stored in the fridge. It actually didn't last very long - I think it was like 3 days and I began to notice a funny smell and a cloudy look to one of the jars - so I just threw it out.

If you want the most nutritional bang for your buck use the foods as fresh as possible.

It will last longer in the fridge if you put chunks of coconut meat in the water when you are storing. At least it did for me.

You can freeze the extra flesh too. It still works great for coconut wraps. I drink mine as soon as I open them, I never have any left over coconut water. I just wish there was a way to avoid purple coconuts. My last two cases that I purchased were purple.
