There are a couple of recipes for potato salad and other potato dishes in Alissa's book, but they don't use white potatoes - just substitutions for them?

Raw irish potatoes are not digestible to humans.

You can eat raw potaotes. You just might not like the taste. They taste very starchy.

Really?? They aren't digestable? My dad was a potato farmer and we used to peel them and eat them out of the field. I still eat a few pieces now and again when I am preparing a sad meal for my family. My girls love them cut up small with salt. Are they really that bad for you? How about when they are dehydrated and are like potato chips?

They're digestible. My mom and daughter eat them with salt out of hand like apples.
I tried making raw potato chips. Didn't like them. Too starchy for me.

Sweet potato/yam dehydrated chips are MUCH tastier!!!
{But I still have eaten raw potato on occasion!}
I believe the reason potatoes (like white bread & white rice) are not good for you is not just the starch, but they're very high in the glycemic index, which basically means the can raise your blood sugar levels rapidly, which, if happening lots, wears out your pancreas over time, leading to diabetes...or something like that.

I've heard of raw potatoes being used as a remedy for parasites.
I imagine that raw potatoes which are fresh-picked from the field are less starchy, just like fresh-picked corn.

Funny - I've heard that parasite can inhabit raw potato and if not cooked thoroughly they can wind up in your intestines. This is a job for Google, maybe.
Otherwise, if what I heard was wrong, I would think that they could be finely chopped, rinsed (maybe a couple times), marinated in soy sauce or a salt water alternative, etc, and they would be good dehydrated...

Ew... I just Googled "raw potato parasite" and the cleansing properties seem evident (from what I read). So, since noting came up in the first 5 or 6 results I am going to deem them "safe for consumption."
I'm going to say that raw potatos are avoided in raw mashed potato recipes because A) they are nothing like the cooked thing and, say, cauliflower, is, and B) they are hard to digest, on account of all the starches.
Still though - I think they are worth some consideration maybe in a more complicated recipe not centered around potato. Let me know if you come up with anything - it might be worth it to try something, they're so cheap:)
