looks so good! i am so trying this when i find
a young coconut in my frozen tundra! :D


Stuffed cucumbers with Neptune Salad


Stuffed cucumbers with Neptune Salad
Ingredients
meat from 2 young coconuts, cut into small pieces
1 celery stalk, finely diced
1 carrot, shredded
¼ cup black olives, chopped
1 tablespoon yellow or white onion, finely diced
½ dill pickle, finely diced
¼ cup Neptune Cashew creme
sea salt, to taste

To make the Neptune salad mix all ingredients, except cucumbers together in a bowl. Chill at least four hours, overnight is best.
With a vegetable peeler, create stripes on the outside of the cucumbers, leaving every other section intact.
Cut off ends of cucumber and slice into 1- 1 1/2-inch rounds. With a 1/2 teaspoon spoon, scoop out the seeds and inner flesh of each cucumber. Do not scoop all the way through.

Fill cucumbers with Neptune salad.

Neptune Cashew Creme
Makes 1.5 cups
Ingredients
1 c. cashews, soaked
2 tablespoons dried seaweed, ground
1 c. water
juice of one lemon
1 t. sea salt, add more if desired

Blend cashews, seaweed, sea salt and lemon juice, stream water in a bit at a time until smooth.

This sounds like a perfect recipe to introduce some family members to the delicious wonderful world of raw at our Christmas dinner; I can't wait to try it out on my friends at work, either.

It is a great recipe. I used it for an office party once. It was a big hit. The recipe for the Neptune cashew creme is at the bottom of the recipe.

That recipe sounds so good! I'm getting into seaweeds these days. But, like you, I am unable to find any young coconuts her in the frozen north.

That does sound great snow; I'd take the olives out and the rest would be good to go for me. Thanks for posting. The stuff you create is always inspiring. I can't wait for you to come out with that cookbook. It always amazes me at how much freedom we have with raw. The sky really is the limit. I keep it simple these days but that's for budgeting purposes. But gosh, when I'm ready to be creative and think outside the box, I have so many wonderful options.... I think my sister and I will try this next month. She's doing a 30 day raw challenge.

i just passed it on cause it looked so good.
you & your sis are going to have a blast on the 30 day
it is so helpful to have a buddy
it's fun and you are accountable to someone besides yourself :p
